Loaded Vegetable Quiche
Ingredients
1 (9 inch) deep-dish pie crust
2 tablespoon SLO Olive Basil Olive Oil
½ cup sliced onion
½ cup chopped green bell pepper
½ cup mushrooms, sliced
½ cup chopped zucchini
1 large tomato, sliced
2 tablespoons all-purpose flour
2 teaspoons dried basil
3 large eggs, beaten
½ cup milk
½ teaspoon salt
¼ teaspoon ground black pepper
1 ½ cups shredded Colby-Jack cheese
Directions
Gather all ingredients. Preheat the oven to 400 degrees F.
Bake pie crust in preheated oven until firm, about 8 minutes. Remove crust from the oven and set aside. Reduce oven to 350 degrees F.
Heat SLO Olive Basil olive oil in a large skillet over medium heat. Add onion, bell pepper, mushrooms, and zucchini and cook, stirring, until softened, 5 to 7 minutes. Remove vegetables from skillet and set aside.
Sprinkle tomato slices with flour and basil; cook in the skillet over medium heat for 1 minute per side. Set aside.
Whisk eggs, milk, salt, and pepper together in a small bowl.
Spread 1 cup cheese in the bottom of pie crust. Layer vegetable mixture over the cheese, then top with tomato slices. Pour egg mixture over top and sprinkle with remaining 1/2 cup cheese.
Bake in the preheated oven until a knife inserted near the center comes out clean, 40 to 45 minutes.
Cool 5 minutes before serving.
Olive Oil Waffles with Dark Chocolate Sauce
Ingredients
1 cup plain flower
1.5 tsp baking powder
4 tsp sugar
pinch of salt
1 egg
1 cup milk
1/2 cup SLO Olive Arbosana Olive Oil
For the Sauce
3 oz Celia dark chocolate
2 tbs maple syrup
1/3 cup coconut cream or regular cream
splash of water to thin the sauce if needed
Top with a scoop of your favorite ice cream.
Instructions
To make the waffles, place the dry ingredients in a bowl and whisk to combine.
Add in the egg, milk and oil, and stir together with a wooden spoon. Don't worry if the batter is lumpy - just don't over mix.
Bake the waffles on a medium-high setting on your waffle maker - they should be nice and dark golden brown. They will seem soft at first, but a few seconds out of the waffle maker, they will be crispy!
To make the sauce, place all the ingredients into a saucepan and melt together over a very low heat. Thin with a splash of water if it's too thick
Serve the waffles with the sauce, and a scoop of vanilla (or coconut) ice cream.

Strawberry Balsamic Martini
Ingredients
5 Fresh, ripe and hulled strawberries
2.5oz your favorite Vodka
1/2 teaspoon SLO Olive Strawberry Balsamic
1 teaspoon of simple syrup
1 small whole strawberry for garnish
Instructions
Muddle strawberries in base of shaker.
Add other ingredients.
Shake with ice and strain into a chilled glass.
